Aquest treball de recerca s\u2019ha centrat a estudiar com respon l\u2019organisme despr\u00e9s de consumir dos tipus d\u2019\u00e0pats molt diferents: un \u00e0pat cetog\u00e8nic i un \u00e0pat basat en la pir\u00e0mide aliment\u00e0ria catalana.<\/p>\n\n\n\n<p>L\u2019estudi neix de l\u2019inter\u00e8s per entendre si el tipus d\u2019alimentaci\u00f3 pot provocar canvis mesurables en el metabolisme, m\u00e9s enll\u00e0 de les recomanacions generals. Per analitzar aquesta resposta s\u2019ha utilitzat el <em>Glucose Ketone Index<\/em> (GKI), un indicador que relaciona els nivells de glucosa i de cossos cet\u00f2nics a la sang i permet observar quin combustible utilitza principalment el cos. Quan el GKI \u00e9s elevat, l\u2019organisme dep\u00e8n sobretot de la glucosa, fet que implica una major activaci\u00f3 de la insulina. En canvi, un GKI baix indica una major utilitzaci\u00f3 de greixos i per tant cetones com a font d\u2019energia. Per aquest motiu, aquest \u00edndex \u00e9s especialment interessant per estudiar la relaci\u00f3 entre alimentaci\u00f3, metabolisme i resist\u00e8ncia a la insulina.<\/p>\n\n\n\n<p>Per dur a terme el treball, es van analitzar persones sanes a qui se\u2019ls van mesurar els nivells de glucosa i cetones en dej\u00fa i aproximadament una hora despr\u00e9s de menjar. Els dos \u00e0pats aportaven la mateixa quantitat d\u2019energia, per\u00f2 tenien una composici\u00f3 molt diferent. Despr\u00e9s de l\u2019\u00e0pat cetog\u00e8nic, els valors de glucosa es mantenen bastant estables i els nivells de cetones no disminueixen de manera significativa, fet que provoca que el GKI vari\u00ef molt poc. Aix\u00f2 indica una resposta metab\u00f2lica estable i una baixa necessitat d\u2019insulina per gestionar l\u2019energia aportada.<\/p>\n\n\n\n<p>En canvi, despr\u00e9s de l\u2019\u00e0pat basat en la pir\u00e0mide aliment\u00e0ria catalana, s\u2019observa un augment notable de la glucosa i una disminuci\u00f3 clara de les cetones. Com a conseq\u00fc\u00e8ncia, el GKI augmenta de manera marcada, indicant una major depend\u00e8ncia de la glucosa i una activaci\u00f3 m\u00e9s intensa de la insulina. Aquest tipus de resposta, si es produeix de manera repetida en el temps, pot estar relacionada amb el desenvolupament de resist\u00e8ncia a la insulina. Els resultats indiquen, per tant, que els \u00e0pats rics en hidrats de carboni generen una resposta metab\u00f2lica m\u00e9s intensa, mentre que els \u00e0pats cetog\u00e8nics produeixen una resposta m\u00e9s estable. A m\u00e9s, l\u2019an\u00e0lisi de les dades suggereix que l\u2019edat pot influir en aquesta resposta, ja que en general els adults tendeixen a presentar increments del GKI m\u00e9s elevats que els joves despr\u00e9s d\u2019un \u00e0pat ric en hidrats de carboni.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"731\" src=\"https:\/\/www.ipsi.cat\/elfil\/wp-content\/uploads\/2026\/01\/image3-1024x731.png\" alt=\"\" class=\"wp-image-9228\" srcset=\"https:\/\/www.ipsi.cat\/elfil\/wp-content\/uploads\/2026\/01\/image3-1024x731.png 1024w, https:\/\/www.ipsi.cat\/elfil\/wp-content\/uploads\/2026\/01\/image3-300x214.png 300w, https:\/\/www.ipsi.cat\/elfil\/wp-content\/uploads\/2026\/01\/image3-768x548.png 768w, https:\/\/www.ipsi.cat\/elfil\/wp-content\/uploads\/2026\/01\/image3.png 1244w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<p>Un altre aspecte important del treball \u00e9s que el metabolisme no \u00e9s un sistema completament fix. A trav\u00e9s de seguiments continuats, especialment en un participant analitzat durant un per\u00edode prolongat de temps, s\u2019ha pogut observar que el GKI basal, mesurat en dej\u00fa, pot variar al llarg dels dies segons el tipus d\u2019alimentaci\u00f3 seguida. En aquest participant, els canvis en la dieta es van associar a modificacions progressives del GKI i del pes corporal, mostrant una clara adaptaci\u00f3 metab\u00f2lica. Aquests seguiments reforcen la idea que el cos no respon nom\u00e9s a un \u00e0pat puntual, sin\u00f3 que s\u2019adapta de manera progressiva al model alimentari habitual. En aquest sentit, una alimentaci\u00f3 alta en hidrats de carboni pot afavorir un metabolisme m\u00e9s dependent de la glucosa i de la insulina, mentre que una alimentaci\u00f3 baixa en hidrats pot facilitar una major flexibilitat metab\u00f2lica.<\/p>\n\n\n\n<p>En conjunt, aquest treball posa de manifest que el tipus d\u2019alimentaci\u00f3 t\u00e9 un impacte directe i mesurable sobre el metabolisme, tant a curt termini com de manera progressiva. El GKI es presenta com una eina \u00fatil per entendre aquestes difer\u00e8ncies metab\u00f2liques i per analitzar la relaci\u00f3 entre alimentaci\u00f3, \u00fas de la insulina i salut metab\u00f2lica. Tot i aix\u00f2, cal tenir en compte que l\u2019estudi s\u2019ha realitzat amb una mostra redu\u00efda i en un context no cl\u00ednic.
